It’s Mother’s Day and what mom doesn’t love a great home cooked meal?! You sure don’t need to be a master chef in order to make this delicious recipe! Here is the recipe for our 30 Day Challenge Garlic Cashew Broccoli Chicken:


12 oz. chicken, cut into strips

1 1/2 lbs of fresh broccoli

1/3 cup crushed cashews

1 tbsp coconut oil

3 tbsp soy sauce

2 cloves garlic

2 tsp white vinegar

1 tbsp raw honey

ground pepper

Directions: Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter. While the broccoli is coking, melt the coconut oil in a small skillet over medium heat. Add chicken strips and cook for 5 minutes. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Cook and additional 5 minutes, then remove from the heat. Mix in the cashews, and pour the chickena nd sauce over the broccoli.

Serve to Mom and enjoy!
