16 oz lean flank steak

2 medium zucchinis

2 bell peppers

Small wooden skewers

Seasonings: cayenne, pepper, paprika, garlic


Set oven to 405°F. Cut flank steak into 1” pieces and season with your choice of seasonings. Chop zucchini and bell pepper into 1” pieces. Assemble your kabobs, alternating between beef, bell pepper and zucchini. Place the assembled kabob on a baking sheet/pan and bake or grill for 8-12 minutes depending on how you like your steak. Serve with a large green side salad, with a drizzle of extra virgin olive oil and balsamic vinegar as dressing, and/or with 1+ cups of any steamed vegetables of your choice. Makes 3-4 servings
